New Moon Maple Muffins

We baked these delicious muffins to celebrate the new moon, but they are a sweet treat any time you get a craving for some maple goodness. Easy to make and a healthy alternative to other desserts, this recipe is sure to become a favorite- it's certainly one of ours!

Servings: 12 muffins

Prep Time: 25 minutes

Cook time: 15-20 minutes

Total time: 40-45 minutes

Ingredients

  • 2-1/4 cups all purpose flour

  • 3/4 cup whole wheat flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1.5 cups pure maple syrup, preferably Dark Amber

  • 12 tablespoons (1.5 sticks) unsalted butter, melted *Note: you can substitute vegan butter*

  • 1/2 cup whole milk *Note: we used almond milk instead*

  • 1 large egg *Note: we used duck eggs, but chicken eggs work just fine*

  • 1 large egg yolk

  • 1 cup coarsely chopped walnuts (optional)

  • Softened unsalted butter, for greasing the pan

Instructions

In a large bowl, whisk together the all purpose flour, whole wheat flour, baking powder and salt. Set aside.
In a medium bowl, whisk together the maple syrup and melted butter. Whisk in the milk, followed by the egg and egg yolk. Add this mixture to the dry ingredients and whisk until just smooth. Stir in the walnuts, if using. Let the batter sit for 5 minutes.
Meanwhile, grease the muffin pan generously with softened butter and preheat oven to 400°F.
Spoon the batter evenly into the prepared pan. The cups will be almost full. Bake for 10 minutes, then reduce the temperature to 375°F and bake for about 10-15 minutes more, or until the muffins are golden and a cake tester inserted into the center of a muffin comes out clean.
Cool muffins in the pan for 5 minutes, then remove muffins from pan. Serve warm with butter and jam, or place on a rack to cool.
