New Moon Maple Muffins
We baked these delicious muffins to celebrate the new moon, but they are a sweet treat any time you get a craving for some maple goodness. Easy to make and a healthy alternative to other desserts, this recipe is sure to become a favorite- it's certainly one of ours!

Ingredients
2-1/4 cups all purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1.5 cups pure maple syrup, preferably Dark Amber
12 tablespoons (1.5 sticks) unsalted butter, melted *Note: you can substitute vegan butter*
1/2 cup whole milk *Note: we used almond milk instead*
1 large egg *Note: we used duck eggs, but chicken eggs work just fine*
1 large egg yolk
1 cup coarsely chopped walnuts (optional)
Softened unsalted butter, for greasing the pan
